  • 300grams sweet potato, peeled and cut into cubes
  • 1tablespoons canola oil
  • 1 medium red capsicum, de-seeded and cut into bite size pieces
  • 3 cloves garlic, peeled and crushed
  • 1 medium white onion, peeled and diced
  • 1 2/3 cup coconut milk
  • 1/4 cup vegetable stock
  • 1teaspoons cumin seeds
  • 1teaspoons coriander seeds
  • 1teaspoons mustard seeds
  • 2teaspoons green curry paste
  • 100grams broccolini

Description

A spicy, aromatic and creamy curry.

Method

Step 1 of 5

Heat up a large pan to a medium heat and fry the spice seeds for 2 minutes or until they start to crack.

Step 2 of 5

Transfer the seeds to a pestle and mortar and crush, then return to the pan with the canola oil.

Step 3 of 5

Add the sweet potato, pepper, onion and garlic and cook this all for 5 minutes while tossing.

Step 4 of 5

Add the rest of the ingredients apart from the parsley and allow this to simmer for 30 minutes while stirring occasionally.

Step 5 of 5

Remove from the heat and serve with the parsley as a garnish with some suggested serving of rice or naan breads.
