- 3 medium duck breasts, no skin or bone, excess fat removed.
- 1 medium red onion, peeled and diced
- 4 cloves garlic, peeled and mashed
- 1 medium red capsicum, de-seeded and chopped
- 200grams pineapple, peeled and chopped
- 100grams curry paste
- 1 2/3 cup coconut milk
- 80grams green beans
- 2tablespoons sesame oil
- 12 baby tomatoes, halved
Description
An aromatic curry that is lightly spiced with sweet pineapple.
Method
Step 1 of 6
Dice the duck breasts into bite size portions.
Step 2 of 6
Heat up a large saucepan to a medium heat, add the sesame oil and then add the onions and garlic.
Step 3 of 6
Fry for 2 minutes and then add the duck and fry while tossing for a further 2 minutes.
Step 4 of 6
Add the pepper and the tomatoes and fry for 2 more minutes.
Step 5 of 6
Add the rest of the ingredients, bring to the boil and then allow to simmer for 15 minutes stirring occasionally.
Step 6 of 6
Remove from the heat and serve with a suggested side of naan breads and rice.
