- 2tablespoons olive oil
- 2 shallots, peeled and minced
- 1 clove garlic, peeled and minced
- 400grams mushrooms, finely sliced
- 1 pinch salt (to taste)
- 1 pinch pepper (to taste)
- 2/3 cup white wine
- 1tablespoons mustard
- 150grams heavy cream
- 2tablespoons tarragon, finely chopped

Description
This creamy, herby and hearty mushroom sauce is perfect with chicken or steak.
Method
Step 1 of 3
In a skillet over medium low heat, add the olive oil. Tip in the shallots and garlic. Stir-fry for about 2 minutes. Add the mushrooms. Mix thoroughly and let it cook for another 3 minutes or until the mushrooms are cooked. Season with salt and pepper.
Step 2 of 3
Add the white wine and allow the alcohol to cook off and reduce for about 5 minutes, making sure to scrape all the bits at the bottom of the pan. Add the mustard, cream, and tarragon and mix it until incorporated. Season with salt and pepper, mix and bring to simmer.
Step 3 of 3
If you prefer a smoother sauce, allow the sauce to cool slightly and blend the sauce in a food processor or blender. Serve the sauce on top of steak and mashed potatoes.
