  • 400grams sweet potato, peeled and cut into small chunks
  • 1/2 medium butternut squash, peeled and cut into small chunks
  • 2tablespoons canola oil
  • 3 cloves garlic, peeled and mashed
  • 2 cups vegetable stock
  • 20grams butter

Description

This sweet potato mash is aromatic and creamy.

Method

Step 1 of 3

Peel and cut your vegetables into small chunks. Add canola oil to a pot a heat on medium hear. Add in the vegetables and sauté for 2 minutes.

Step 2 of 3

Add the vegetable stock and cover, cooking for 15-20 minutes until stock has evaporated and vegetables are soft.

Step 3 of 3

Transfer to a bowl and mash or blend until there are no lumps. Mix in 20g of butter and season to taste.
