  • 1/2 bunch continental parsley, chopped
  • 1 punnet cherry tomatoes, thinly sliced
  • 1 bunch broccolini, lightly blanched and chopped
  • 1/2teaspoons hot chilli flakes (optional, to taste)
  • 2 1/2 cup mozzarella, shredded

Method

Step 1 of 3

Preheat oven to 180°C. Place each half of garlic bread butter side-up in a casserole or baking dish, and slice mostly through into 8 pieces per loaf.

Step 2 of 3

Cover with half the mozzarella, then tomatoes and broccolini, then top with remaining mozzarella. Generously season with salt and pepper, then sprinkle with chilli flakes.

Step 3 of 3

Bake for 15-20 minutes, or until cheese is golden and garlic bread is crisp on outer edges. Remove from oven. Sprinkle with parsley, cut into portions and serve.
