- 2tablespoons olive oil
- 2 sticks celery, finely sliced
- 1 medium onion, peeled and finely diced
- 4 cloves garlic, peeled and minced
- 500grams puy lentils, ready cooked
- 150grams kale, destalked and finely chopped
- 2 medium lemon, 1 juiced and zested, 1 chopped into wedges
- 3tablespoons parsley, fresh, chopped

Description
This speedy smoked cod with lemony lentils and kale is a perfect midweek meal.
Method
Step 1 of 4
Heat half of the oil in a large pan on medium heat and cook the onion and celery for 3-4 minutes until softened. Stir in the garlic and cook for 1 minute. Add the kale, lemon juice and zest and cook for 2 minutes, until wilted.
Step 2 of 4
Place the smoked cod in a pan with enough water to cover, bring to the boil and simmer for 5 minutes. Drain well.
Step 3 of 4
Stir the lentils into the frying pan and cook for 2 minutes, or until warmed through.
Step 4 of 4
Serve the cod fillets on top of the lentils with fresh parsley scattered on top, a drizzle of olive oil and lemon wedges on the side.
