  • 9 marinated artichoke heart quarters, halved
  • 2teaspoons lemon, rind finely grated
  • 60grams spinach leaves (to garnish)
  • 18 semi-dried tomatoes
  • 6 skinless white fish fillets
  • 12 kalamata olives, pitted, halved lengthwise
  • 1 1/2tablespoons extra virgin olive oil
  • 18 sprig lemon thyme, picked
  • 1 1/2tablespoons lemon juice
  • 1 clove garlic, thinly sliced

Description

White fish fillets baked in a parcel of squash, spinach and olives, finished with basil sauce.

Method

Step 1 of 4

Preheat oven to 180°C. Cut 6 pieces of baking paper, 25x35cm. Place a fish fillet in the middle of each piece of baking paper.

Step 2 of 4

Arrange artichoke, olives, semi-dried tomatoes, rind, thyme and garlic over the fish. Drizzle with olive oil and lemon juice. Season to taste.

Step 3 of 4

Bring the sides of the baking paper up to meet in the middle to form a pouch, twist the top gently and secure with kitchen string.

Step 4 of 4

Place parcels on a baking tray and bake for 10-12 minutes or until fish is cooked. Scatter with spinach leaves, to serve.
