  • 260grams basmati rice
  • 400grams plant based mince
  • 2 large capsicums, green and red, diced
  • 1 large onion, peeled and sliced
  • 2 medium carrots, peeled and diced
  • 2 cloves garlic, peeled and crushed
  • 5centimeters ginger, peeled and grated
  • 1 medium red chilli, sliced
  • 3tablespoons sweet chilli sauce
  • 2tablespoons rice wine vinegar
  • 4tablespoons soy sauce (reduced salt)
  • 3tablespoons toasted sesame oil, divided

Description

Meat free mince works well in Asian dishes like this sticky stir fry, soaking up all the flavours of the sauce.

Method

Step 1 of 4

Cook the rice according to pack instructions and set aside. Heat half the oil in a large wok on a high heat and fry the mince for 5-6 minutes until browned.

Step 2 of 4

Add the onion, capsicums and carrots to the pan and cook for 4-5 minutes, then add the garlic, ginger and red chilli and cook for 2 minutes.

Step 3 of 4

Whisk together the sweet chilli sauce, rice wine vinegar, soy sauce and remaining sesame oil and add to the wok. Cook for 2 minutes until sticky and bubbling.

Step 4 of 4

Serve the mince in bowls with rice.
