For the sauce
- 1teaspoons ginger, peeled and grated
- 2teaspoons maple syrup
- 4tablespoons hoisin sauce
- 4tablespoons soy sauce (reduced salt)
- 2tablespoons rice wine vinegar
- 1/2 medium red chilli, diced
- 1 cloves garlic, peeled and minced
- 2teaspoons cornflour
- 2tablespoons canola oil
- 300grams seitan, chopped into cubes
- 2 medium carrots, peeled and sliced
- 2 medium capsicums, green and red, sliced
- 2 large spring onions, sliced, green tips reserved
- 30grams peanuts, salted, chopped
- 280grams rice
Description
This hoisin seitan stir-fry recipe makes for a sweet yet spicy vegan dish that can be on the table in just 15 minutes.
Method
Step 1 of 5
Whisk together the ingredients for the sauce in a bowl and set aside.
Step 2 of 5
Heat half the oil in the wok on a medium high heat and fry the seitan cubes on all sides until crisp and golden, 5-7 minutes.
Step 3 of 5
Add the remaining oil to the wok along with the carrots and capsicums and cook for 2-3 minutes to soften slightly, then add the spring onions and cook for 1 minute.

Pour the sauce into the wok, tossing to coat everything well. Reduce the heat and cook with the lid on for 3 minutes until the sauce has reduced.
Step 5 of 5
Serve in bowls with rice and sliced spring onions and crushed peanuts on top.
