- 1tablespoons sunflower oil
- 450grams ready-to-wok medium rice noodles
- 1 bunch spring onions, finely chopped
- 2 cloves garlic, grated or finely chopped
- 2tablespoons oyster sauce
- 2tablespoons Thai fish sauce, such as nam pla
- 350grams leftover roast turkey, any skinless, sliced or roughly shredded
- 1 fresh hot red chilli, deseeded and finely chopped
- 1teaspoons sugar
- 200grams beansprouts
- 1 pinch salt
- 1 pinch freshly ground black pepper
Description
Use up your leftover turkey in this Asian-inspired stir-fry noodle recipe. Tossed in a spicy sweet sauce, this quick and easy dish can be on the table in 15 minutes.
Method
Step 1 of 3
Heat the oil in a wok over a medium-high heat. Add the noodles, and stir-fry for a couple of minutes. Add the spring onions, and toss together. Now add the garlic, and stir-fry for a few seconds more. Remove the mixture from the wok, and set aside.
Step 2 of 3
Add the leftover turkey to the wok, and stir-fry over a medium heat for a minute or two, then add the oyster sauce, fish sauce, chilli, and sugar. Cook over a high heat for a few minutes to heat through.
Step 3 of 3
Return the noodle mixture to the wok along with the beansprouts, and toss in the sauce until well coated. Taste, and season well with salt and black pepper. Serve immediately.
