For the sauce
- 3tablespoons oyster sauce
- 2tablespoons soy sauce (reduced salt)
- 1teaspoons fish sauce
- 250grams egg noodles
- 2tablespoons canola oil
- 3 cloves garlic, peeled and minced
- 4 large spring onions, sliced
- 1 medium green chilli, sliced
- 100grams chestnut mushrooms, sliced
- 200grams tenderstem broccoli, sliced
- 1 medium green capsicum, sliced
- 2 heads pak choi, sliced
Description
Oyster sauce is the perfect rich and savoury addition to green veggies in this stir fry.
Instruction tip
You can add any green vegetable you like to this stir fry, try green beans, mange tout or kale.
Method
Step 1 of 4
Place the noodles in a large bowl, cover with boiling water and set aside to soften. Whisk the ingredients for the sauce together and set aside.
Step 2 of 4
Add the oil to a large wok on a high heat and cook the garlic, spring onions and chilli for 1 minute, then add the mushrooms, broccoli and capsicum and cook for 2-3 minutes. Add the pak choi and cook for 1 minute.
Step 3 of 4
Add the pak choi and sauce and cook for 1 minute. Add a tablespoon of water to loosen the sauce if necessary.
Step 4 of 4
Stir the noodles into the wok, coat well with the sauce and serve.
