- 150grams Parmesan cheese, freshly grated (save 50g to garnish)
- 1 lemon, sliced (to serve)
- 3 cloves garlic, crushed
- 6-8 spring onions, white and green parts, finely chopped
- 450grams asparagus, ends removed and cut into 2.5cm pieces
- 450grams prawns, peeled and deveined
- 1/4 cup white wine
- 1/4teaspoons salt
- 1/4teaspoons freshly ground black pepper
- 150grams polenta

Description
In this quick and easy dish, prawns and asparagus are stir-fried in a light white wine sauce and served over creamy, cheesy polenta.
Method
Step 1 of 4
Heat the oil in a large frying pan over a medium heat. Add the garlic, spring onions, and asparagus. Cook for 5 minutes, stirring occasionally, until the onions have softened. Then add the prawns and cook for 3 minutes, stirring, until just beginning to turn pink.
Step 2 of 4
Pour in the wine and stir to combine. Cook for a further 2-3 minutes or until the prawns are cooked through and pink. Remove from the heat and season to taste, if needed.

Meanwhile, place 750ml water and 1/4 teaspoon salt in a large saucepan and bring to the boil. Stir in the polenta and reduce the heat to medium-low. Cook for about 5 minutes, stirring occasionally. Remove from the heat and stir in the cheese.
Step 4 of 4
Divide the polenta evenly between four plates and top with one-quarter of the prawn and asparagus stir-fry. Garnish with cheese and serve hot with lemon slices.
