  • 1tablespoons olive oil
  • 1 pinch hot or regular paprika
  • 400grams basmati rice
  • 1 1/3 liters hot vegetable stock
  • 675grams skinned white fish, such as haddock or sustainable cod, cut into chunky pieces
  • 1 handful fresh dill, finely chopped
  • 1 lemon, juice only
  • 1 onion, finely chopped
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 pinch ground turmeric
  • 2 cloves garlic, grated or finely chopped
  • 200grams fresh green beans, trimmed
  • 280grams artichoke hearts, drained and rinsed
  • 4 tomatoes, skinned and chopped

Method

Step 1 of 3

Heat the oil in a large heavy frying pan over a medium heat. Add the onion and a pinch of salt, and sauté for about 5 minutes until soft and translucent. Stir through the turmeric, then add the garlic, beans, and artichokes. Cook gently for about 5 minutes until the beans begin to wilt, adding a little more oil if needed.

Now add the tomatoes and paprika, and cook for 5 minutes. Tip in the rice, and stir through. Pour in half of the hot stock. Bring to the boil, then reduce the heat slightly and simmer for about 15 minutes. Add the remaining stock and the fish, cover the pan, and cook over a low heat until the rice and fish are cooked through.

Step 3 of 3

Keep the lid on the pan until ready to serve, then stir through the fresh herbs and lemon juice. Taste, and season with salt and black pepper.
