- 4 fresh tuna steaks, about 200 g each
- 1 pinch freshly ground black pepper
- 2tablespoons dark soy sauce
- 2tablespoons olive oil
- 2 limes, juice only
- 2 cloves garlic, grated or finely chopped
- 1 piece of fresh root ginger, 2.5 cm piece, finely chopped
- 2tablespoons dark muscovado sugar
- 1teaspoons cayenne pepper
- 1 pinch salt

Method
Step 1 of 2
Put all of the marinade ingredients in a bowl. Season with salt and black pepper, and mix together well. Put the tuna steaks in a plastic freezer bag, tip in the marinade, and seal, making sure that the tuna is well coated. Allow to marinate in the refrigerator for 30 minutes.
Step 2 of 2
Heat the barbecue or charcoal grill until hot. Grill the tuna steaks over a high heat for 2 minutes on each side, turning once during cooking. Remove to a plate, and leave to rest in a warm place for 2 minutes. Serve with a fresh green salad.
