- 3teaspoons coriander seeds
- 6 fresh long red chillies, chopped
- 4 cm piece ginger, sliced
- 3 French shallots, chopped
- 1 lime zested and juiced, grated
- 1teaspoons chilli flakes, crushed, soaked in 1 tsp hot water for 5 minutes
- 1/2teaspoons whole black peppercorns
- 1teaspoons cumin seeds
- 2 lemongrass, white part only, sliced
- 1 handful kaffir lime leaves, shredded
- 1tablespoons vegetable oil
- 6 cloves garlic
Method
Step 1 of 1
Place all ingredients in the bowl of a small food processor and process for 2-3 minutes, scraping down the side of the bowl occasionally, until a finely chopped paste forms.
