  • 3teaspoons coriander seeds
  • 6 fresh long red chillies, chopped
  • 4 cm piece ginger, sliced
  • 3 French shallots, chopped
  • 1 lime zested and juiced, grated
  • 1teaspoons chilli flakes, crushed, soaked in 1 tsp hot water for 5 minutes
  • 1/2teaspoons whole black peppercorns
  • 1teaspoons cumin seeds
  • 2 lemongrass, white part only, sliced
  • 1 handful kaffir lime leaves, shredded
  • 1tablespoons vegetable oil
  • 6 cloves garlic

Method

Step 1 of 1

Place all ingredients in the bowl of a small food processor and process for 2-3 minutes, scraping down the side of the bowl occasionally, until a finely chopped paste forms.
