  • 4 spring onions, finely sliced
  • 1 medium red chilli, finely sliced
  • 480grams seabass
  • 2tablespoons soy sauce, reduced salt
  • 1 medium lime, juiced
  • 2teaspoons honey
  • 2teaspoons sesame oil

Description

These simple and speedy sea bass and bok choi parcels are light and refreshing with Asian flavours, perfect for summer evenings.

Method

Step 1 of 4

Pre-heat the oven to 180°C. Take 4 squares of foil and arrange the bok choi, ginger, spring onions and chilli on the base.

Step 2 of 4

Top each with a sea bass fillet. Whisk the soy sauce, lime juice, honey and sesame oil together with a tablespoon of water and drizzle on top of each fillet.

Step 3 of 4

Fold up the sides of each square of foil to make a parcel, making sure it is securely sealed to keep the steam in.

Step 4 of 4

Bake for 10-12 minutes until the bok choi is tender and the sea bass is cooked through. Remove the sea bass and pak choi from the parcel, plate up and serve.
