- 300grams rice, rinsed
- 1tablespoons sesame oil
- 80grams mushrooms, sliced
- 1 leeks, sliced
- 80grams peas
- 12 medium prawns, de-shelled and sinew removed
- 12 calamari rings
- 24 mussels
- 1 pinch salt
- 1 pinch cracked black pepper
- 1 1/4 cups vegetable stock
- 2tablespoons ginger, chopped
- 1tablespoons ras el hanout
- 1/4 cup cooking white wine
Description
This traditional Asian congee recipe brings out the natural flavours of the delicious seafood.
Method
Step 1 of 6
Cook the rice as per packet instructions and then set to one side.
Step 2 of 6
Heat up a saucepan to a medium heat and then add the sesame oil.
Step 3 of 6
Add the mushrooms, leeks and peas to the pot and cook for 3 minutes.
Step 4 of 6
Add the seafood and cook for a further 5 minutes, turning regularly.
Step 5 of 6
Add the rest of the ingredients, including the cooked rice, to the pot, bring to a simmer and cook for a further 5 minutes.
Step 6 of 6
Once reduced by about half remove from the heat and serve.
