  • 4 cloves garlic, crushed
  • 1/2 cup fish sauce
  • 3 large zucchinis, sliced
  • 200grams vermicelli noodles

Description

This hearty Asian recipe features vermicelli noodles, zucchini and a tomato broth, perfect for cooler nights.

Method

Step 1 of 5

Place mince in a large bowl and season well with salt and pepper. Mix until well combined.

Step 2 of 5

To coat the meatballs, place ½ cup flour on a large plate. Using a small amount at a time, roll the mince mixture into a small ball, then roll in flour to coat. Shake off any excess.

Step 3 of 5

Place oil in a large saucepan over medium heat. Add onion and cook for 2 minutes or until slightly softened. Add tomato and cook for 2 minutes or until mixture is soft. Add garlic and cook, stirring for 20 seconds, or until fragrant.

Step 4 of 5

Add 3 litres of boiling water to the saucepan and bring to the boil over medium heat. Add meatballs and cook for 10 minutes or until meatballs are cooked through. Add fish sauce and zucchini. Cook for 3 minutes or until the zucchini is just tender.

Step 5 of 5

Add the noodles and cook for 2 minutes or until noodles are tender. Ladle into bowls and serve.
