  • 250grams green King prawns, peeled, deveined, tails intact
  • 2teaspoons dried chilli flakes
  • 8 free range eggs, lightly beaten
  • 1 cup shredded carrot
  • 3 spring onions, cut into 3cm lengths
  • 1 cup bean sprouts
  • 1 bunch coriander, leaves picked
  • 1/2 punnet Thai basil, leaves picked
  • 2teaspoons sesame seeds, toasted
  • 2 limes
  • 1tablespoons black sesame oil
  • 1 clove garlic, crushed
  • 5milliliter extra virgin olive oil cooking spray

Description

Drizzled with garlic and lime, this prawn omelette with hints of chilli packs a flavour punch. Serve up this simple meal for breakfast, lunch or dinner.

Method

Step 1 of 4

Spray prawns with oil. Heat a large non-stick frying pan over medium-high heat. Add prawns. Cook, stirring, for 3 minutes or until prawns have changed in colour and begun to curl. Sprinkle with chilli flakes. Transfer to a bowl.

Step 2 of 4

Return pan to medium-high heat. Pour of the egg mixture into the pan. Swirl to cover base of pan. Cook for 3 minutes or until just set and golden brown underneath. Slide onto a serving plate. Repeat to make 4 omelettes in total.

Step 3 of 4

Top each omelette with carrot, onion, sprouts, coriander, basil and prawns. Fold omelettes over to partially cover filling.

Step 4 of 4

Juice 1 lime. Whisk juice, oil and garlic in a jug. Drizzle over omelettes. Sprinkle with sesame seeds. Cut remaining lime into cheeks. Serve with omelettes.
