  • 6 slices fresh root ginger, 1 cm slices
  • 2 cloves garlic, thinly sliced
  • 1teaspoons salt
  • 300grams Chinese leaves, cut into 3.5 cm pieces
  • 3tablespoons Chinese rice wine
  • 1tablespoons oyster sauce
  • 1tablespoons malt vinegar
  • 2teaspoons caster sugar
  • 1/2teaspoons sesame oil

Method

Step 1 of 2

Heat the oil in a wok over a high heat until the oil starts to shimmer. Add the ginger, garlic and salt and stir-fry for 30 seconds.

Step 2 of 2

Tip in the Chinese leaves and stir for 30 seconds, then add the rice wine, oyster sauce, vinegar, sugar and oil and stir-fry for a further 2 minutes until just tender.
