  • 500grams brown rice, ready cooked
  • 5 spring onions, sliced
  • 3teaspoons garlic and ginger paste
  • 1tablespoons chilli paste
  • 450grams brussels sprouts, shredded
  • 1 bunch coriander, fresh, stalks chopped
  • 4 eggs, beaten
  • 1 medium lime, cut into wedges

Description

Give egg fried rice a green twist with shredded brussels sprouts and ingredients you probably have on hand already.

Method

Step 1 of 3

Heat half of the oil in non-stick pan on medium heat and cook the beaten eggs for 1 minute, stirring all the time to scramble. Tip on to a plate and set aside.

Step 2 of 3

Heat the rest of the oil and cook the spring onions and brussels sprouts for 3-4 minutes, until the sprouts are tender. Stir in the garlic and ginger paste, chilli paste and coriander stalks and cook for 1 minute.

Step 3 of 3

Tip the rice into the pan and cook for 2-3 minutes to heat through. Stir in the eggs and fresh coriander and serve immediately with lime wedges.
