- 1/2packets dried vermicelli noodles
- 400grams Woolworths beef meatballs with carrot, celery, tomato & caramelised red onion
- 1/4 cup sweet chilli sauce
- 2 limes
- 350grams Asian-style salad kit
- 1/4 bunch coriander, leaves picked
- 1tablespoons vegetable oil
Description
Take your tastebuds on a heavenly culinary trip to Asia with this meatball noodle salad recipe that strikes the right balance between savoury and sweet.
Method
Step 1 of 4
Place noodles in a large heatproof bowl. Cover with boiling water and stand for 5 minutes or until tender. Drain. Refresh under cold water.
Step 2 of 4
Heat oil in a large non-stick frying pan over medium-high heat. Cook meatballs, turning for 8 minutes or until golden.
Step 3 of 4
Juice 1 lime. Combine sauce and lime juice in a bowl. Add sauce mixture to frying pan. Cook, tossing meatballs to coat in sauce mixture, for 2 minutes or until sticky.
Step 4 of 4
Divide noodles and salad among bowls, reserving dressing and crispy noodles. Drizzle with dressing and top with meatballs, crispy noodles and coriander. Serve with remaining lime cut into cheeks.
