- 150grams prawns, raw, peeled, deveined
- 500grams pork mince, lean
- 1 medium red chilli, diced
- 2tablespoons garlic and ginger paste
- 1/2 bunch coriander, fresh, chopped
- 2teaspoons sesame oil
- 2 cups chicken stock, hot, made with 1 stock cube
- 1tablespoons sriracha sauce
- 1 medium lime juiced
- 2tablespoons soy sauce, reduced salt
Description
These pork and prawn meatballs are juicy and flavoursome cooked in Asian broth, delicious with stir fried vegetables or noodles.
Method
Step 1 of 3
Add the prawns, pork, chilli, garlic and ginger paste and half of the coriander to a food processor and blitz until smooth. Roll into 20 meatballs with your hands, place on a plate and chill in the fridge for 30 minutes.
Step 2 of 3
Heat the sesame oil in a large, deep pan on medium high heat and cook the meatballs for 5-6 minutes until browned all over.
Step 3 of 3
Pour over the stock, lime juice, sriracha and soy sauce, bring to the boil, reduce the heat and simmer for 8-10 minutes until the meatballs are cooked through. Serve with the rest of the coriander on top.
