  • 2tablespoons fish sauce
  • 1/3 cup coconut milk
  • 1 lime, half juiced, half for garnish
  • 3 chilli, finely sliced
  • 1tablespoons brown sugar
  • 1tablespoons lemongrass paste, you may also use fresh lemongrass if available.
  • 4 scotch pork fillet steaks, patted dry
  • 2tablespoons coriander, roughly chopped

Description

These spicy pork scotch fillets are filled with bold flavours, delicious paired with a refreshing slaw or chopped salad.

Method

Step 1 of 3

In a shallow dish, mix the fish sauce, coconut milk, lime juice, chilli, brown sugar, lemongrass and 2 tablespoons of fresh chillies. Marinate the steaks for at least 2 hours or overnight.

Preheat the outdoor grill on high.

Step 3 of 3

Cook the pork fillet tor 3-4 minutes each side or until cooked. Transfer to a heatproof plate. Cover with foil; rest for 5 minutes. Serve this garnished with lime wedges, fresh chillies and coriander.
