- 2tablespoons mustard
- 1 1/4 cup milk
- 1teaspoons paprika
- 1teaspoons salt
- 2teaspoons garlic powder
- 4 scotch pork fillet steaks, patted dry
- 120grams flour
- 900grams sweet potatoes, peeled and quartered
- 2tablespoons butter
Description
Creamy sweet potato mash pairs beautifully with flavourful mustard coated pork steaks.
Method
Step 1 of 4
In a shallow dish, mix the mustard, a quarter of the milk, paprika, half of the salt and half of the garlic powder. Marinate the steaks for at least 2 hours or overnight.

Preheat the oven to 180°C/160°C fan-forced. Dredge the pork fillet in flour and lay on a greased baking sheet. Bake for 30 to 45 minutes, or until brown and crispy.

While waiting for the pork steaks, cook the sweet potatoes submerged in water for about 15 to 20 minutes. In a separate sauce pan, heat the rest of the milk and the butter is melted. Mix in the garlic powder and salt. Take it off the heat.

Drain the potatoes and return it to the pot on low heat. Pour the milk mixture on the sweet potatoes and mix thoroughly. Mash the mixture until it is smooth and creamy. Serve the mustard porkchops with the sweet potato mash.
