- 400grams beef mince
- 5centimeters ginger, peeled, grated
- 4 cloves garlic, peeled and minced
- 4 spring onions, finely sliced
- 1/2 bunch coriander, stalks included, finely chopped
- 1tablespoons canola oil, softened
- 250grams silverbeet, chopped
- 4 heads bok choi, finely sliced
- 1 medium green chilli, finely sliced
- 6tablespoons teriyaki sauce
- 1tablespoons soy sauce, reduced salt
Description
These sweet and sticky meatballs are perfect for a quick midweek meal with stir fried greens.
Method
Step 1 of 4
Place the beef mince, half of the ginger and garlic, chopped coriander stalks and half of the spring onion in a bowl and mix well. Roll into 20 meatballs.
Step 2 of 4
Pre-heat the oven to 180°C. Place the meatballs on a lightly oiled baking tray and bake for 10 minutes.
Step 3 of 4
Heat the oil in a wok and cook the rest of the spring onion, the remaining garlic, ginger and chilli and cook for 2 minutes. Add the silverbeet and bok choi with a splash of water and teaspoon of soy sauce and cook for 3-4 minutes.
Step 4 of 4
Add the teriyaki sauce and soy sauce to a saucepan on medium heat. Add a splash of water to loosen, tip in the meatballs and cook for 1-2 minutes to heat through. Serve on a bed of greens with chopped coriander on top.
