- 2 cloves garlic, thinly sliced
- 2teaspoons ginger, finely grated
- 1/4 cup teriyaki marinade
- 200grams sugar snap peas
- 1 large yellow capsicum, cut into strips
- 1 cup jasmine rice (to serve)
- 1 green onions, sliced (to serve)
- 2tablespoons sesame seeds (to garnish)
- 80grams baby spinach (to serve)

Method
Step 1 of 3
Heat oil in a pan, add garlic & ginger and cook for 20 seconds. Add the beef mince and cook, breaking it up with the back of a wooden spoon, for 5 minutes until browned.
Step 2 of 3
Reduce heat and add teriyaki marinade. Add the sugar snap peas, capsicum and stir to mix evenly. Simmer, uncovered, for 2-3 minutes.
Step 3 of 3
Serve on rice garnished with green onions, sesame seeds and a side of baby spinach leaves.
