For the sauce
- 1tablespoons honey
- 2tablespoons soy sauce
- 4tablespoons water
- 3tablespoons brown sugar
- 1tablespoons canola oil
- 500grams chicken mince
- 200grams snow peas, topped and tailed
- 80grams bean sprouts
- 100grams broccoli, chopped
- 2 stems scallion, sliced
- 400grams soba noodles, cooked
- 2 cloves garlic, peeled and chopped
- 1teaspoons ginger, diced
- 1 medium chili, sliced
- 3tablespoons coriander leaves
Description
This Teriyaki chicken stir fry is packed full of traditional Asian flavours. What’s more, it uses chicken mince, making it a quick and easy meal.
Method
Step 1 of 5
Fry the honey, soy sauce, water and brown sugar and stir over a medium heat for three minutes or until the sugar melts and the sauce thickens.
Step 2 of 5
Remove from the heat and set to one side.
Step 3 of 5
In a medium sized non-stick pan add the oil and fry the mince on a medium heat for 5 minutes until browned.
Step 4 of 5
Add the prepared vegetables, cooked noodles and garlic and ginger to the pan and fry for a further 3 minutes while stirring.
Step 5 of 5
Now add the sauce to the pan and simmer while constantly stirring for 2 minutes before serving. Garnish with chillies and coriander.
