  • 1 green capsicum, deseeded, sliced
  • 1 red capsicum, deseeded, sliced
  • 1 red onion, sliced
  • 2 spring onions, finely sliced (to serve)
  • 500grams chicken stir-fry strips
  • 400grams fresh egg noodles
  • 3 cup vegetable oil (for frying)
  • 227grams can pineapple chunks in juice, drained

Method

Step 1 of 4

Empty prepared batter mix from sauce bottle into a bowl. Add 1/3 cup water and whisk to a smooth batter.

Step 2 of 4

Heat vegetable oil in a medium saucepan over medium-high heat. Lightly coat a quarter of the chicken strips with batter. Carefully lower into oil and deep-fry for 5 minutes or until golden and cooked through. Remove using a slotted spoon and transfer to a plate lined with paper towel. Repeat with remaining chicken.

Meanwhile, transfer 1 tbs of oil from the saucepan to a frying pan over medium heat. Add onion and cook for 3 minutes or until softened. Add capsicum and cook for 3 minutes or until softened. Stir in pineapple and prepared sauce. Bring to a simmer.

Step 4 of 4

Cook noodles following pack instructions. Divide noodles among bowls. Top with chicken, then spoon over vegetables and sauce. Sprinkle with spring onion and serve.
