- 1 green capsicum, thinly sliced
- 1 carrot, halved and thinly sliced
- 1 brown onion, sliced
- 5milliliter virgin olive oil spray
- 115grams baby corn, halved
- 225grams can pineapple pieces, in natural juice, drained
- 2 stick celery, thinly sliced
- 300milliliter sweet and sour dipping sauce
- 8 pork loin steaks
- 1 pinch pink salt ground (to taste)

Method
Step 1 of 5
Season pork with salt and pepper.
Step 2 of 5
Heat a non-stick frying pan over medium-high heat. Spray with oil and cook pork medallions for about 3 minutes each side until golden brown and cooked through. Transfer to a plate and cover with foil to keep warm.

Add onion, corn, carrot, celery and capsicum to pan and cook, stirring often, for 3-4 minutes or until just tender.
Step 4 of 5
Pour sauce over vegetables and add pineapple. Cook for 2 minutes or until heated through.
Step 5 of 5
Place pork onto serving plates. Spoon vegetables and sauce over and serve with rice.
