  • 1 large red capsicum, trimmed, thinly sliced
  • 1 bunch broccolini, trimmed
  • 4 green shallots, thinly sliced
  • 1/4 cup kecap manis
  • 440grams can pineapple pieces in unsweetened juice
  • 500grams bottle buttermilk pancake shaker
  • 1/3 cup cashews
  • 1tablespoons vegetable oil
  • 350grams fresh Singapore noodles

Method

Step 1 of 9

Drain pineapple and reserve 1/3 cup of the juice. Combine with kecap manis and cornflour in a jug.

Step 2 of 9

Place noodles into a large bowl. Cover with boiling water and stand for 5 minutes or until noodles have separated. Drain.

Step 3 of 9

Cut steaks into thin diagonal strips and place into a bowl.

Step 4 of 9

Heat a wok over a high heat. Add 2 teaspoon oil and swirl around hot wok. Add 1/3 of pork and stir fry for 1-2 minutes or until browned. Transfer to a bowl. Cook remaining portions.

Heat remaining oil in wok. Stir fry capsicum and broccolini for 1 minute.

Step 6 of 9

Drizzle 1 tablespoon of water over vegetables and cover. Cook for a further minute. Add shallots, pineapple pieces and sauce to vegetables with pork. Stir until well combined.

Cook for 2 minutes or until sauce comes to the boil and thickens.

Step 8 of 9

Stir through noodles and cashews.

Serve immediately.
