  • 1/2 cup semi-dried tomatoes, sliced
  • 500grams pork mince
  • 1tablespoons olive oil
  • 300milliliter light thickened cream
  • 1/2 cup fresh breadcrumbs
  • 3 cloves garlic, crushed

Method

Step 1 of 4

Cook pasta in a large saucepan of boiling salted water, following packet instructions, until tender. Drain and return to pan. Cover to keep warm.

Step 2 of 4

Meanwhile, heat half the oil in a large frying pan over medium-high heat. Add breadcrumbs and cook for 2 minutes, stirring, or until golden and crisp. Add most of the garlic and cook for 30 seconds, stirring, or until fragrant. Transfer to a bowl and set aside to cool.

Step 3 of 4

Heat remaining oil in same frying pan over medium-high heat. Add onion and mushroom and cook for 4 minutes, stirring, or until golden and tender. Add thyme and remaining garlic and cook for 1 minute, stirring, or until fragrant.

Step 4 of 4

Add mince and cook for 6-8 minutes, breaking up with a wooden spoon, or until browned. Add 1/4 cup water and cream and bring to the boil. Reduce heat to medium and simmer for 10 minutes, stirring occasionally, or until mixture thickens. Add pasta and tomato, tossing to coat. Add parmesan to crumbs and scatter over pasta with basil. Serve.
