Description

When the midweek rush is on, this easy, budget-friendly recipe for curried beef bowls is perfect. You'll only need 20 minutes to whip it up, and it's less than $5 per serve.

Method

Step 1 of 4

Heat oil in a large frying pan over medium heat. Add onion and garlic, and cook, stirring, for 3 minutes or until softened. Add mince and cook, breaking up lumps with a wooden spoon, for 4 minutes or until browned.

Step 2 of 4

Add curry paste and 1 cup water. Bring to a simmer, then simmer for 2 minutes or until thickened. Add capsicum and cook for 2 minutes or until warmed through.

Step 3 of 4

Meanwhile, heat rice according to packet instructions.

Step 4 of 4

Divide rice among bowls, top with curried beef and coriander, and serve with naan.
