  • 2tablespoons lemon juice

  • 200grams Greek-style yoghurt
  • 120grams baby spinach leaves
  • 500grams beef mince
  • 1 1/2 cup basmati rice
  • 1tablespoons olive oil
  • 4 garlic cloves, crushed
  • 1/3 cup sultanas

Method

Step 1 of 4

Heat butter in a medium saucepan over medium-high heat. Add half each of the ginger and garlic, sultanas and rice, then cook, stirring, for 1 minute or until fragrant. Add 3 cups cold water and bring to the boil. Reduce heat to low and simmer, covered, for 12 minutes or until water evaporates and rice is almost tender. Remove from heat and stand, covered, for 5 minutes or until tender. Season to taste.

Step 2 of 4

Meanwhile, heat oil in a large frying pan over high heat. Add mince and cook, stirring with a wooden spoon to break up lumps, for 5 minutes or until browned. Add remaining ginger and garlic, cumin, coriander and paprika and cook, stirring, for 1 minute or until fragrant. Add honey and cook, stirring, for 2 minutes to crisp up mince.

Step 3 of 4

Stir spinach and lemon juice into beef mixture and cook for 1 minute or until spinach has wilted. Season.

Step 4 of 4

Divide rice amongst serving bowls. To serve, top with beef, yoghurt, herbs and lemon.
