  • 1tablespoons finely grated fresh ginger
  • 1 lemongrass stick, white part only, finely chopped
  • 1 1/2tablespoons vegetable oil
  • 2tablespoons salt-reduced soy sauce
  • 450grams microwave brown rice
  • 250grams zucchini spaghetti
  • 1/2 small red onion, thinly sliced into rounds
  • 1 long red chilli, thinly sliced (to serve)
  • 2tablespoons coriander sprigs (to serve)
  • 1 lime, cut into cheeks (to serve)

Method

Step 1 of 3

Heat oil in a large frying pan over high heat. Add beef and cook, breaking up lumps with a wooden spoon, for 4 mins or until well browned. Add ginger and lemongrass, then cook, stirring for 30 secs or until fragrant. Add soy sauce and 1 tbs water, and stir to combine. Remove pan from heat.

Heat brown rice and cook zucchini spaghetti according to packet instructions.

Step 3 of 3

Divide rice, zucchini, onion and beef mixture among bowls. Sprinkle with chilli and coriander. Serve with lime cheeks.
