  • 2 carrots, grated
  • 2 zucchini, grated
  • 1/3 cup continental parsley leaves, finely chopped
  • 1/2 cup shredded parmesan
  • 1tablespoons fennel seeds, chopped
  • 2 free range eggs
  • 10 sheet sheets filo pastry
  • 5milliliter olive oil cooking spray
  • 1/4 cup Macro Organic tomato chutney (to serve)
  • 150grams mixed baby leaf salad mix (to serve)

Description

Feel like homemade sausage rolls, only lighter? This tasty sausage roll recipe is bursting with hidden zucchini, carrot and parsley.

Method

Step 1 of 5

Preheat oven to 240°C/220°C fan-forced. Line a large baking tray with baking paper.

Step 2 of 5

Combine mince, carrot, zucchini, parsley, parmesan, half the fennel and 1 egg in a bowl. Lightly beat remaining egg in a small bowl.

Step 3 of 5

Cover pastry with a damp tea towel to prevent drying out. Spray 5 pastry sheets with oil and layer on top of each other. Repeat to make a second stack. Cut each stack in half crossways to form 4 stacks.

Step 4 of 5

Place one-quarter of the mince mixture along one short end of one pastry stack. Brush opposite end of pastry with a little egg. Roll up to enclose filling. Place roll, seam-side down, on tray. Repeat with remaining pastry stacks, mince mixture and egg.

Step 5 of 5

Brush top and sides of rolls with egg. Sprinkle with remaining fennel. Bake for 25 minutes or until golden and cooked through. Halve rolls, then serve with chutney and salad.
