  • 1 red onion, finely chopped
  • 250grams pumpkin, coarsely grated
  • 1/2teaspoons ground allspice
  • 2teaspoons ground cumin
  • 1 lemon, wedges
  • 1 cup coarsely grated mozzarella
  • 500grams beef mince
  • 200grams reduced-fat feta, crumbled
  • 1/4 cup vegetable oil
  • 400grams no added salt diced tomatoes
  • 250grams Macro organic frozen spinach, thawed
  • 3 cloves garlic, crushed

Method

Step 1 of 6

Combine flour and 1 tsp salt in a large bowl. Gradually stir in 1 2/3 cups warm water and mix to form a soft dough. Knead dough on a lightly floured surface for 5 minutes or until smooth and elastic. Return to bowl. Cover with a tea towel and set aside.

Step 2 of 6

Heat 1 tbs oil in a large frying pan over medium-high heat. Add onion and garlic and cook for 5 minutes, stirring, or until softened. Add mince and cook for 5 minutes, breaking up lumps with a wooden spoon, or until browned.

Add spices and cook for 1 minute, stirring, or until fragrant. Add pumpkin and tomatoes. Cook for 7 minutes or until liquid has almost evaporated.

Step 4 of 6

Meanwhile, squeeze excess moisture from spinach. Stir spinach into beef mixture. Season. Combine cheeses in a bowl.

Step 5 of 6

Divide dough into 6 equal portions. Roll out 1 portion on a lightly floured surface to a 20x40cm rectangle. Top half of dough with one-sixth of the beef mixture, leaving a 2cm border. Sprinkle over one-sixth of the cheese mixture. Fold in half to enclose filling. Use a rolling pin to seal edges. Repeat to make 6 gozlemes.

Step 6 of 6

Heat a chargrill pan over medium heat. Cook gozlemes for 2-3 minutes on each side, brushing with a little of the remaining oil, or until golden and heated through. Serve with lemon.
