Heat oil in a large saucepan over medium heat. Add onion and capsicum. Cook for 4 minutes or until tender.

Increase heat to medium-high and add mince. Stir with a wooden spoon, breaking up any lumps, until mince is well browned. Add coriander, cumin, oregano and paprika. Stir until well combined.

Step 3 of 12

Pour salsa and 1/2 cup water over mince, stirring until mixture is combined and comes to the boil. Reduce heat to low and simmer for 15 minutes or until thickened. Cool slightly.

Step 5 of 12

Lightly grease a 6 hole Texas muffin pan.

Place tortillas, 2 at a time, into microwave and cook on high 100% for 5 seconds to soften.

Using a pair of scissors, make a cut from the edge to centre. Shape into a cone and ease into muffin hole to form a pie shell. Repeat with remaining tortillas.

Bake for 10 minutes or until tortillas are crisp.
