  • 1/2 bunch coriander, sprigs picked
  • 1 lime, cut into wedges

Description

Up your veggie intake by swapping taco shells for baked sweet potatoes. They're the perfect vessel to fill with your favourite taco ingredients.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line a baking tray with foil. Prick sweet potatoes all over with a fork, then place on tray. Bake for 1 hour or until tender.

Step 2 of 4

Meanwhile, heat oil in a large frying pan over high heat. Cook three-quarters of the onion, stirring, for 2 minutes or until browned. Add mince and cook, breaking up lumps with a wooden spoon, for 2 minutes or until browned. Add seasoning mix, then stir until well combined. Add beans and cook, stirring, for 2 minutes or until heated through.

Step 3 of 4

Combine tomato and remaining onion in a small bowl. Season with pepper.

Step 4 of 4

Halve sweet potatoes lengthways, ensuring not to cut all the way through. Split open. Fill each with mince mixture, then top with avocado, tomato salsa and coriander. Serve with lime wedges.
