Eamon's Smiley Face Nachos

- 1 lemon juiced
- 2 small broccoli florets
- 2tablespoons red capsicum, chopped
- 1/2 slices wholemeal bread, sliced
- 1 cup carrot, grated
- 1tablespoons coriander leaves, chopped
- 1 spring onoin, chopped
- 100grams cherry tomatoes
- 1 cup zucchini, grated
- 1 lime juiced
- 50grams unsalted natural corn chips
- 1/4 cup canned corn kernels, drained
- 1/2 cup crushed tomato
- 250grams low fat beef mince
- 2teaspoons olive oil
- 2tablespoons reduced fat tasty cheese, grated
Method
Step 1 of 11
Heat oil in a small frying pan over medium heat.
Step 2 of 11
Add mince and cook for 5 minutes until well browned.
Step 3 of 11
Add vegetables and crushed tomato and cook for 5 minutes until vegetables are tender.

Pile corn chips onto a heatproof plate.

Grill for 1-2 minutes until warmed and cheese has melted.

Halve 1 cherry tomato and set aside.

Chop remainder and add a little lemon juice.
Step 9 of 11
Mix corn with capsicum, onion, coriander and lime juice.

Top corn chips with mince mixture, tomato salsa and corn salsa.

Decorate like a face using halved tomato for eyes, broccoli floret for nose and red capsicum for eyebrows and mouth.
