  • 1 cup sour cream (to serve)
  • 1tablespoons coriander, chopped
  • 2 spring onions, chopped
  • 125grams can corn kernels, drained, rinsed
  • 5milliliter virgin olive oil spray
  • 1 cup chicken, cooked, shredded
  • 2/3 cup canned black beans, drained, rinsed
  • 1 cup light tasty cheese, shredded
  • 6 wholemeal tortillas
  • 300grams chunky tomato salsa (to serve)

Method

Step 1 of 3

Combine chicken, corn, beans, onion and coriander in a bowl.

Step 2 of 3

Place tortillas on a bench and sprinkle cheese evenly over half of each tortilla. Top with 1/3 cup chicken mixture and spread evenly. Fold tortilla over and press to enclose.

Step 3 of 3

Heat 2 large frying pans over medium heat. Spray tortillas with a little oil, place into pan and cook for 2 minutes. Turn over, press edge down to seal and cook a further 2-3 minutes or until golden. Cut tortillas in half and serve with salsa and sour cream.
