  • 1/2 avocado, mashed
  • 2teaspoons lemon juice
  • 1 small tomato, diced
  • 1/4 green capsicum, finely sliced
  • 1/2 small carrot, shredded
  • 1 cup zucchini, grated
  • 1/2 cup canned no added salt red kidney beans, drained
  • 100grams unsalted natural corn chips
  • 1/4 cup canned corn kernels, drained
  • 1/2 cup canned crushed tomato
  • 250grams low fat beef mince
  • 2tablespoons natural yoghurt
  • 2teaspoons olive oil
  • 1/3 cup reduced fat tasty cheese, grated

Method

Step 1 of 9

Heat oil in a small frying pan over medium heat.

Step 2 of 9

Add mince and cook for 5 minutes until well browned.

Step 3 of 9

Add zucchini, beans and crushed tomato and cook for 5 minutes until vegetables are tender.

Step 4 of 9

Preheat grill to medium high.

Step 5 of 9

Pile corn chips onto a heatproof plate.

Step 6 of 9

Top with half of the cheese.

Step 7 of 9

Grill for 1-2 minutes until melted.

Step 8 of 9

Roughly mash avocado and lemon juice with a fork.

Step 9 of 9

Top corn chips with mince, tomato, corn, carrot, capsicum, remaining cheese, avocado and yoghurt.
