- 2teaspoons mexican chilli powder
- 2 avocados, peeled
- 2 ripe tomatoes, finely diced
- 2tablespoons coriander, chopped
- 1 onion, chopped
- 1/2 red onion, finely diced
- 1packets soft fajita tortillas
- 300milliliter light sour cream
- 5milliliter virgin olive oil spray
- 1 lime juiced
- 1tablespoons ground cumin
- 1teaspoons pepper (for seasoning)
- 2tablespoons black olives, chopped
- 600grams beef mince
- 420grams can mexican beans
- 1tablespoons oil
- 1 pinch pink salt ground (to taste)
Method
Step 1 of 4
Preheat oven to 180°C. Heat oil in a frying pan and cook onion over low heat for 5 minutes until soft. Increase heat, add mince and spices and cook for 5 minutes, breaking meat up with a wooden spoon as it cooks. Stir in beans and simmer for 10 minutes until thick.

Warm tortillas as per packet instructions then separate and spray each lightly with oil. Press into large muffin tins, overlapping the side to form a bowl. Bake for 10-12 minutes until crisp and golden. Leave to cool.

Drain excess juice from chopped tomato and combine with onion and olives. Mash avocado and stir in lime juice, coriander and salt and pepper. Beat sour cream until smooth. Place each of the accompaniments in separate serving bowls.
Step 4 of 4
To serve, fill tortilla bowls with some of the mince mixture. Reheat in oven for 5 minutes until mince is warm, if necessary (this may take longer if mix was made in advance and refrigerated). Arrange on a platter with the accompaniments so each guest can add their own toppings.
