  • 1 onion, finely chopped
  • 1 small red capsicum, diced
  • 2tablespoons coriander (to serve)
  • 1tablespoons olive oil
  • 420grams can no-added-salt red kidney beans, rinsed, drained
  • 400grams can diced tomatoes in juice
  • 175grams corn chips
  • 1 cup tasty cheese, grated
  • 400grams roast chicken

Method

Step 1 of 5

Heat oil in a large heavy-based frying pan over medium-high heat. Add onion and capsicum and cook, stirring, for 2-3 minutes or until onion is soft.

Step 2 of 5

Add beans, tomato and seasoning. Bring to the boil. Reduce heat to medium and simmer for 15 minutes.

Step 3 of 5

Meanwhile, remove meat from chicken and shred.

Step 4 of 5

Place corn chips on plate.

Step 5 of 5

Divide among serving plates. Garnish with coriander. Serve.
