- 1 free range chicken (whole)
- 1packets tortillas
- 1 lime, cut into wedges (to serve)
- 200grams salsa
- 420grams can corn, drained
- 2 cup tasty cheese, grated

Method
Step 1 of 4
Cook chicken as per package instructions. Remove chicken meat and discard skin and bones. Shred meat roughly. Heat a sandwich press or non-stick frying pan over medium heat.
Step 2 of 4
Lay 5 tortillas on benchtop and spread each with salsa dip. Top with chicken, shallot, corn, coriander and grated cheese. Top with remaining tortillas.
Step 3 of 4
Spray sandwich press or pan with oil spray and cook each quesadilla for about 3 minutes or until golden and cheese is melted. If cooking in a frying pan, turn to brown both sides.
Step 4 of 4
Cut quesadillas into quarters and serve with lime wedges.
