  • 1 red capsicum, deseeded, finely diced
  • 1 cup coriander leaves
  • 1 red onion, finely sliced
  • 400grams BBQ chicken, shredded or macro
  • 10 soft tortillas
  • 1/2 cup sour cream
  • 1/3 cup green jalapeño sauce
  • 2tablespoons vegetable oil
  • 1 cup cheese, shredded

Method

Step 1 of 2

Combine the chicken and jalapeño sauce in a bowl. Lay 5 tortillas on a clean surface. Spread each with 1 tbs sour cream, then top with capsicum, onion and coriander leaves, followed by chicken and cheese. Top with the remaining tortillas.

Step 2 of 2

Heat 1 tsp of the oil in a frying pan over medium heat. Place a quesadilla in the pan and press down firmly. Cook for about 1 minute or until golden. Brush top side with oil, then carefully turn over and cook for 1 minute. Transfer to a plate and cover to keep warm. Repeat for remaining quesadillas. Cut into quarters to serve.
