- 1tablespoons olive oil
- 2 tortillas
- 75grams Cheddar cheese, grated
- 125grams cooked ham, sliced
- 2 gherkins, sliced
- 1 pinch salt
- 1 pinch freshly ground black pepper
Method
Step 1 of 3
Heat the oil in a non-stick frying pan, then fry one tortilla for 1 minute or until golden.
Step 2 of 3
Sprinkle over the cheese, leaving a little room around the edge. Top with the ham and gherkin, then season with salt and black pepper.
Step 3 of 3
Top with the other tortilla, pressing it down with the back of a fish slice to sandwich the two together. Scoop the quesadilla up, carefully turn it over, and cook the other side for another minute, or until it is golden and the cheese melted. Slice in halves or quarters, and serve.
