  • 2tablespoons La Costena Chipotle in Adobo Sauce, finely chopped
  • 400grams can La Costena Refried Pinto Beans, warmed
  • 1 cup La Costena Chunky Salsa Mild
  • 2tablespoons extra virgin olive oil
  • 500grams white onion, thinly sliced
  • 2 cups cooked shredded chicken
  • 1 cup tomato puree
  • 1packets corn tortillas 12 pack
  • 1 cup shredded tasty cheese
  • 1packets jalapeño, thinly sliced (optional)
  • 1packets lime, cut into wedges
  • 1/2packets 200g pkt corn chips, to serve

Method

Step 1 of 4

Heat oil in a large frying pan over medium heat. Cook onion for 5 minutes, stirring, or until onion has softened. Add chicken, chipotle in adobo sauce and puree, then cook for 5 minutes, stirring, or until warmed through. Season with pepper.

Step 2 of 4

Place beans in a microwave- safe bowl and cook, covered, on high for 1 minute or or until warmed through.

Step 3 of 4

Divide beans over one-half of each tortilla. Top with chicken mixture and cheese, then fold tortillas to enclose filling.

Step 4 of 4

Heat same cleaned large frying pan over medium-low heat. Cook quesadillas, in 3 batches, for 45 seconds on each side or until the cheese has melted and tortillas are golden. Cut quesadillas into wedges, then serve with salsa, jalapeño, if using, lime wedges and corn chips.
