- 1/2tablespoons olive oil
- 2 tortillas
- 50grams Cheddar cheese, grated
- 1 fresh mild green chilli, deseeded and finely chopped
- 1-2teaspoons sliced green jalapeños (from a jar)
- 1 small handful fresh coriander, chopped
- 1 pinch freshly ground black pepper

Method
Step 1 of 3
Heat the olive oil in a non-stick frying pan, then fry one tortilla for a minute or until lightly golden.
Step 2 of 3
Scatter over the cheese, leaving a little room around the edge, then add the chilli, jalapeños, coriander, and a pinch of black pepper.
Step 3 of 3
Top with the other tortilla, pressing it down with the back of a fish slice to sandwich the two together, Scoop the quesadilla up, carefully turn it over, and cook the other side for another minute until golden and the cheese has melted. Slice in half or quarters and serve.
