  • 1tablespoons basil, chopped
  • 3 ripe tomatoes
  • 1 pinch pepper (for seasoning)
  • 30grams baby rocket leaves (to serve)
  • 310grams roasted pepper strips, drained
  • 60grams salami, sliced
  • 1/4 cup black olives, pitted
  • 1 cup mozzarella, grated
  • 1 ciabatta loaf, halved lengthways
  • 1 pinch sea salt ground (to taste)

Method

Step 1 of 2

Preheat oven to 200°C. Lay bread halves onto a baking tray. Halve tomatoes crossways and scoop out seeds with a teaspoon. Dice and transfer to a bowl. Season with salt and pepper. Add basil and toss to combine. Spread over bread.

Step 2 of 2

Top bread with salami, capsicum and olives. Sprinkle cheese over and bake for 10 minutes until cheese has melted. Top with rocket and serve.
